Time to bake Almond Flour Chocolate Chip Cookies!
With the launch of my book has come a lot of walking and talking about walking. I felt the need for some really good energy; some decadent almond and chocolate bites. My friend Carmen shared some of these with me on a hike in the Kananaskis a couple of weeks ago and since that day, I have been hooked. And so have my kids and my hubby. Very yummy. So on this cloudy day in Calgary, I baked up a batch.
And for all of you who eschew gluten and all things animal, these are perfect. You can grind your own almonds or take the easy way and buy ground almonds. I get mine at Community Health Foods.
Almond Flour Chocolate Chip Cookies
4 cups almond flour or meal (Community health Foods sells ground almonds)
2 Tbsp coconut flour
1 tsp baking soda
½ – ¾ tsp salt
½ cup melted coconut oil or 1/2 cup melted butter
½ cup maple syrup
1 Tbsp vanilla extract
¾ cup chocolate chips
Directions:
– heat oven to 350 degrees.
– combine almond flour, coconut flour, baking soda and salt in medium bowl and stir breaking up any lumps.
– combine melted coconut oil, maple syrup and vanilla in small bowl.
– pour into dry mixture.
– stir in chocolate chips.
– scoop into small balls and place on cookie sheet.(I have a 30 ml scoop)
– bake for ~ 11 minutes.
